Culinary Maestro Francois Lecouvez Ascends To New Heights As Executive Chef At Fairmont Jasper Park Lodge
JASPER, August 16, 2023 – Fairmont Jasper Park Lodge is delighted to announce the appointment of Francois Lecouvez as the new Executive Chef. With a passion for exceptional cuisine and a global culinary background, Francois is excited to lead the dining scene in the heart of the Canadian Rockies.
Francois first joined Fairmont Jasper Park Lodge in August 2022 as the Executive Sous Chef where he thrived in kitchen leadership and attention to details on the plate. Prior to arriving in Jasper, Francois garnered invaluable expertise through years of collaborating with prestigious establishments across the culinary world. From plying his craft in Michelin star restaurants in France to opening two restaurants in Thailand, Chef Francois has learned and flourished in the art of gastronomic excellence. He has also mentored aspiring restauranteurs from entry level to executive sous chefs – his entire team not only respects his culinary skill, but his ability to develop high-end chefs.

Francois’ culinary inspiration is derived by his location. Capturing the essence of Jasper by seeking local ingredients and crafting dishes that celebrate the grand destination is a priority to his cooking style. He aims to tell the story of Jasper through his food and believes it is important to educate people on food waste and sustainable cuisine.
“When you are in a National Park, you have to be conscious about bringing the right ingredients from the right place.” Francois said. “You have to care about the animals and how you treat our nature and it is important to educate more people about food waste and be conscious of how we cook.”
As Executive Chef, Francois will oversee the diverse array of dining options offered at Fairmont Jasper Park Lodge, ranging from upscale fine dining in Orso Trattoria to casual alpine-inspired fare at The Great Hall. His innovative approach, coupled with his respect for locally sourced ingredients, is poised to tantalize the taste buds of both visitors and locals alike.
